Page heading is Joomla menu Property, that allow you to add heading text on that menu.
You can add the heading like News is menu is showing news items or anything that belongs to your site.
In 2nd screenshot its from your template i think, you should check the template documentation. Or contact to template support team for its features.

Logo text and heading is depend on your site content, its totally depend on site owner what content they want to put on site.
I think you can consult it with site owner what is site name and page heading he/she want to show.
