Offlajn Vertical Menu

Customers want the new and cool. I can't find any JA template that uses a vertical menu. Offlajn makes a nice one. How do I adapt it to your system? I want to completely forgo the conventional relative-position banner menu. It's going to be one menu system for all devices. If you won't actually offer a template that works like this, I hope you will at least publish a detailed tutorial on how to achieve it via third-party addons.

T4 do support the vertical menu using off-canvas module position.
You can Enable the off canvas menu from template navigation settings. And publish a menu module on off-canvas position. It will appear like this : http://prntscr.com/xkvmol
there are third party menu extension on JED you can use, a custom script is not suggested as tutorial as its not part of system and sometimes make issue with other extension due to conflicts.

Current we have own Menu system using Off canvas sidebar that is widely used by users and like as well. The same is in your example. If there is more demand for the same there may be similar style in future templates.

I can tell you there's a demand as evidenced by growing number of sites using it and continued flight of developers from Joomla to WordPress.
Let's say I just want to use the vertical menu. No top menu at all. What's the best way to hide? Delete the PHP layout block, suppress via CSS? What would you do? What have other customers done? Has anybody else out there already paved the way?

Yes you can control it via Layout php code and remove the main nav code and keep only off canvas.
