The Category Menu in the template used the Menu items from categories menu on Joomla backend > Menu > Category menu.
All the menu listed on this menu will display under it. Unfortunately VM does not have any menu item that use to display category list or sub categories.
The Current Menu item on your site or Demo is Category layout that will display a single category from VM to show the Products.
On your request it needs a different menu type that does not offered by Virtuemart. I suggest you to raise this request to extension provider as template only used to show the content that offered by VM.
In other way you can make custom layout using html code in the article to show parent category and its child category in single article type menu. This will include customization of html code in the article editor based on your needs.
