The simple way is using CSS to hide these elements, you can try with:

.toolbar-sorter.sorter {
    display: none;
}

.products-toolbar .jamg-layout-chooser span:nth-child(2) {
    display: none;
}

.products-toolbar .jamg-layout-chooser { display: none; }

About the language file, here is the default file for English: /language/en-GB/en-GB.com_jamegafilter.ini

You can copy this file to language folder of German >> rename the file >> and translate as you wish:

/language/de-DE/de-DE.com_jamegafilter.ini
