when I put "date of birth" several member profiles present this error
but when I modify by putting on "date" the error disappears from the profiles but it is not the age which appears in frontend

Please provide a member username or profile URL which has this issue,
Possibly you have the DB issue on site for some members if they imported on site and not saved data via profile.

So here I understand when a field is missing, the member's page is not displayed, except it had been displayed for years.
Why overnight the profile of these members is no longer displayed, especially since the problem affects at least 250 profiles

There is nothing happened auto, possible on your site admin you changed the field types that already in use of many members that result the issue as you already using a different filed type and after that it is not added as new.
If you want to change the field you should make a new entry as users already using that. I am not sure what was in previous as you already changed it on site.
Thank you for your explanations, I have another question, when I modify the field by replacing "birthday date" by "date" the profiles are displayed correctly, on the frontend but it is not the member's age which appears but the date of birth (example 12/03/1979) except I wish that (42 years) appears on the frentend.
It's possible?

Each fields type is different and would not work same.
On this i will check with dev team if there is possible option or switch the formate as you needed.
