Where are these words ?

Hi,
In ja-ego, option medical layout. I would like to change the words "About me" and "Working timetable" for others words. Diferents words to differents doctors, not the same word to all doctors

The language values are define in the files
/language/en-GB/en-GB.tpl_ja_ego.ini
You can change it from the file or make an override from Joomla language override options.

Ok,
I understand that I cannot put a specific word for each doctor in that place. If I delete or change those words for others, they will be the same for all the doctor's files, is this correct?
Is there no other way to write what needs to be put there?

These are the description of the section and work same.
if you will change the word it will display same on all the articles.
As : About me section give information of doctors about profile so it is standard for all site views.
You can not make different language text based on the article.

Perhaps it would be interesting to put those words as optional in the extra fields section of the article where is the rest of the information.

Extra fields only picks the file value as it not that it would not work that way. This is only the title.
