Last week, March 28th, my website was displaying properly, now it is back to being 3 months old! All my changes on my home pages and individual pages have been DELETED!

Pls backup your site and install latest version as we mentioned in this blog post and check again.

I installed 1.1.9. Does this mean our website won't get "changed" again without us changing it?
OvalPiston Previously, when you make changes to JA Builder pages, it will be pushed to server of JA Builder and pulled again when you load pages. But with the new version, everything will be saved in your site's database, it will be independent from server and this will help to avoid any server issue in the future.
After installing each package of JA Builder, you can try to edit a page >> compare it with its frontend and see how it looks. If everything is the same, you can edit and publish page normally.
