You have to edit same type of layout in above case it apppears Header-1 to remove the logo from header code and customize the Header main nav.

Hi
There is no code to write, it depends on your customization.
If you want to hide the Logo from header you can simply remove the logo code from it. Remove the logo div.
To change the size you can increase logo column size.
Like it is col-1 now.
About the word showing below logo it appears masthead title from JA Masthead module. Can u share url of this page here

You can add more menu item there with custom titles : /administrator/index.php?option=com_modules&view=module&layout=edit&id=114&client_id=
