What extensions and templates have php 8.0+ support?

Do you mean JoomlArt's templates or JB?

JoomlArt's templates are ready for PHP 8 and Joomla 4, JB are not ready yet.

php7.4+ security updates end in November

Hi,
Buildr and Responsive 2 are compatible with PHP 8 (8.0.8, I haven't tested PHP 8.1), so I think that since Buildr is the master template of all the other templates that followed it, I guess the others will too compatible...

Thanks guys I've updated a few sites that use buildr and zentools2 without a problem.
