I need to have the automatic email notification after a quiz has been taken and needs to be reviewed to be sent to admins instead of the teachers.
How is this possible?

Unfortunately, the email notification will be sent to teachers only for now. You will have to customize the core of component in order to achieve that. I recommend you to hire a developer to get it done for you.
