I need some items to not appear if someone adds them to cart

I have certain categories called one-of-a-kind where if someone adds this product to their cart, I need to turn 'publish' off so no one else can buy it. There are other categories where this is not the case, so I need to configure this feature on the website based upon the product category.

If you're using a ecommerce extension, you can set the number of in-stock product to 1 only.

I don't think I am using an extension for the product display. I am using Joomla 4.1.5 and Virtuemart 4.0.4. Again, I want to set the product publish to "false' based upon certain categories or even products. Once someone adds one of these products to cart, I want them to un-publish. There is another category, where even if the stock is empty, I want people to be able to add to cart.

And I need it to be removed when added to someone's cart. Once in the cart, there is not another one available for someone else in case the first person completes the purchase.
