How do I set the "simple" page as the standard homepage versus the selection?? Or easier question - how in the world can I make the "Home Simple" layout the default, without the other idiotic options?

Yes, correct - instead of having the page with the selections, I would like to have one (e.g. the game one) at start.
You can access backend of your site >> find the menu item Home Game , for example, and simply set it as 'Default' menu item of your site.
We put all of these menu items in 'Topbar Menu Left' menu, you can move it to any menu as you wish.
