When you enable "Build Mega Menu" option for a menu item, you will be able to add menu items / modules / ... for the dropdown menu. And yes, it supports a level for dropdown only.

If you do not enable Megamenu option, it will show all sub-menu items in all levels as the structure you created for that menu item like the 'SWING" menu item on your site now 🙂

I hope this makes senses.

Yes, it does make sense if using a module to show the menu choices. Mega menu will not convert the menu - at least the 2nd+ menu levels into a MegaMenu. You depend on using a module or menu item choice.
Please update your docs to explain Mega Menu doesn't work the second level menu items and makes them disappear.
It wasted a lot of my time not knowing.
