Hi. I use the JA Vitality template and I noticed that there is an important feature missing from the JA Advanced Custom Module, the testimonials.
How can I implement this missing featgure?

JA ACM is special module, each template will support several types of this module only and not testimonials type in this case.
You can look at templates which are built with T4 framework which supports Testimonials and copy to JA Vitality template on your site. And of course, you have to customize style so it can work smoothly.
