Trying to increase 'desc' character limit and create overrides

Dear support/community,

How do i adjust the character limit for the descriptions shown on product-items? i can't find the setting anywhere and it doesn't relate to the read-more position in the article. I was also wondering what the best way for building overrides is, creating them through the template doesn't tend to work.

See attached screenshot, . The text is cut off around 100 characters, i want it to be reliant on the read-more in the article, or just increase the limit if that's not possible.
