Integrate Google fonts locally

Hello, is it possible to integrate Google Fonts locally in accordance with the European GDPR? How does this work with Vertex 4.3.1?

At the moment I do this with the plugin JMG Disable Google Fonts Version 5.1.21. This plugin is not officially released for Joomla 5 and will not be developed further. Therefore I am looking for a clean alternative.
