Hi Paulus!
Tomato sauce or sugo, as it is called in Italy, can be prepared in two ways.
1.- With a sauce of onion and garlic. Very usual in southern Italy.
2.- With a sauce of onion, celery and carrot, all very fine crushed. Very usual in northern Italy
3.- In Napoli it is prepared only with garlic.
I'm from the south, but I like to make salsa like in the north.
