You may kindly ask in VM forum since the layout rendering is coming from Virtuemart component as to how specific code in Virtuemart sub-category layout file be changed in order to get only the specific text have different link reference which would enable to add specific css declaration to selector (text link) to get the results as envisaged
As suggested by Pankaj, You may currently get the complete section css changed as shown by him due to inherited coding structure.
Ref: Screenshot wherein it is seen that link selector is wrapping both image and text and not text solely
