I haven’t found anything that addressed this concern, so if there is a post, please point me to it.

From what I can see, the functionality of both the 1.5 and 1.6 templates are the same even though 1.5 uses K2 and 1.6 does not.

Am I missing anything by using 1.6 without K2 instead of 1.5?

Yes, the k2 component is not updated to work on the joomla 1.6 so that the blog is not implemented for current, this is The only difference between two version 1.5 and 1.6
