As the title suggests – I want to build a catalogue without shopping (buying online), can this be done easily with Virtuemart?

Yes, this is very easily done. In Virtuemart administration, you can set “catalogue only” or shopping cart functionlity. It is as simple as reading a newspaper ( provided you can read ) :p
