IF you are on Joomla 1.5, you can go to the admin panel, Extensions Manager>Template Manager> mark the template and press edit at top right, there you have the options to set the default color scheme.

Plz edit ja_vars_1.0x.php(templatesja_helio folder)
You will see those lines:

# default color
$_params->set(JA_TOOL_COLOR,'default'); //default, green, red, orange
Change default to orange as you want
