As the title says really. I can’t get any usual methods of changing the title tag in the code to work or can’t find where to put it.

I would like to have “Page title – Site name”.

That is not a template related issue. You can try what ever template and you will have same site-name.

You should use a good SEO solution I personally recommend sh404SEF.
