Is there any way to choose which k2 items to publish in front page of J Wall & JA Lens Templates

If this is possible, can this be done by choosing “Featured” items?

I installed the quickstart without any modifications in both temps.

You’re on the right track. The only way to selectively publish stuff on the homepage is thru featured items. You may do so by selecting multiple categories for the K2 menu item then making it to show featured only. There’s no need to do nesting.
