I’d like to disable the "reading more" and "share this" panels.
1. for one unique article if possible
2. For all website
  Is there something I’m missing to get that ?

This is applicable for all articles ,You can Disable the Typo tools and sharing tools from Template options for whole site .
Here you can see it in documentation .
