Hello,
Would anybody care to explain the t3 assets folder function. It appears when plugin is activated and seems to hold optimized js and css. But what am I to do with it and the bunch of files that accumulate in it when I try to debug my css?

If you want to debug your css, you should disable css optimization mode to get exact css files.
