I’m a newb to Joomla, and an old postnuke user. In postnuke to change the number of posts displayed on the front page you simply use a drop down to set the number in the config screen, but I can find no such option for the items in the body for Joomla. I’m using Hedera, and I was looking for an option in the html. Is that were I need to go to get more items in the body for news posts?

You can go to the admin panel, Menu>Main Menu>Home and you have some settings for that on the right side:
# Leading
# Intro
Columns
# Links
