I only want the Light Cream template color scheme to be used for my site. Where do I set that parameter?

in your administrator area:

Goto [FONT=”Arial Black”]EXTENSIONS > TEMPLATE MANAGER > JA_ORES > PARAMETERS > DEFAULT STYLE[/FONT]

Select whatever you want!
