I created a new profile in order to costumize colors.

The help text is saying:
“What are profiles? T3 Framework provide profiles to hold the settings of the template. You can see the default profiles just above this help. Click any of these profiles to clone / rename & customize / delete existing profiles.”

Where is the ‘costumize’ option?

When you click on a profile, all setting below it became gray (disabled). If you want to overwrite the default setting, just click on checkbox next to a setting and set a necessary value. Assigning of a profile is set in “Page Assignments” tab on the left side. You can find more info in the Wiki.
