That ones that you describe in your pic are subcategories showed by the ja_news_pro module in linear layout

if you don’t need a subcategory in your Ja_news_pro module you can unpublish it or if you want change the order you

can change the order in your menus–>magazine and change the order as you like

Most the order I know it.
Only the first ear it the “all”. I would like to remove this or to modify ,that let the first ear be a certain category.

Yes.
The there is not need for “all” ears.
I would like it if the 2 ears would be the primary ones.
It’s possible?

I’m sorry but this option is not available in the module settings, if you want it you must edit some css and php files
