I have just installed the quickstart and when I try to edit a module (any k2 module) there are no parameters to the right of the details/menu assignment.

I have tried adding a new menu and editing all the other menus in K2 and there are no parameters.

From what you mentioned, I guess K2 component on your site is missing xml files, you can try to go K2 website and download v2.6.7 from K2 and re-install it on your site. Let me know if it helps
