I can’t seem to get the avatars on the blog items to disappear.

I prefer not to have have the avatar, author, date etc

Any help on where to turn those off?

Hi
This would be the Joomla extra field.
When you open the article to edit > Field > edit the extra files to want to show them or Not.

I removed the avatar; however it has a block there now that says "Super user" like it is trying to pull an image; also it says "Hair Stylist"; how do I remove those? I thought I turned all that off?

I deleted the extra field from your site http://prntscr.com/hhiwsf
It seems your site using server cache as the changes does not apply on front end,
Can u clear if there is any other cache is applied to your site.

Hi
open template folder /css/custom.css file
Create custom.css file if its not present and add this code

.xblog.grid-view .info-content .info-content-inner {   display: none; }

Save file, clear cache and check.
it will hide the author block from blog view
