JA University menu header works best for me, but I like everything else about Uber template.
Is it possible to use JA University menu with rest of Uber, how difficult is it to switch the two, would this cause issues?

I checked both menu headers on JA University and Uber templates. But I’m afraid you are very different to mix Uber menu header into University menu header because you have to many custom work about php code, css style if you are a none developer.

You need to check some files below if you want to do

templates/uber/tpls/blocks/header.php
templates/uber/tpls/blocks/topbar.php
templates/uber/tpls/blocks/mainnav.php
templates/uber/css/megamenu.css
templates/uber/css/off-canvas.css
