How do i mimic the demo sites where you can select Navigation then choose a submenu option like Suckerfish etc??

i noticed it passes $jos_change_template, but i cant figure out what to do with it..

could you please provide some info on how to replicate the demos so i can tweak the template to change the menu style on the fly.. thanks
