I am using the Puresite template that I have installed via a quickstart installation.
I would like to change the default color from red to blue.
I have changed that on Template Manager->Profiles->theme settings and then check blue.
I cannot uncheck the “default” item, so the “default” and the “blue” profile are both cheched at same time on the list (see attached image).
But even if this change works at the beginning, after a while, just the Home page is blue and all the other pages are red.
How to fix this issue?

This is correct it works in this way.
I have tested your settings on my localhost and cannot replicate your issue.
You need to be sure that your changes were applied to the default profile and that this profile is correctly assigned to all pages of the template
