How easy is it to customize the Joomla Templates once they are installed? Is the customization done through code editing, or through the Administrative interface?

It all depends upon the kind of customization you need?

If you wish to add something new to template or customize its look, It is quite obvious that you will need to commit changes to css files / php files. Nothing new in that.

Change of menu type, layout overrides, font sizes, color themes, mobile / handheld layout etc… are some of the settings, which can be changed from template backend (T3 Powered Templates). For more info on T3 Powered templates. Please check the JA Wiki.

If you need graphical modification mostly you have to change some code or change some template files. Most of content (texts, category etc) you can change with administrative panel.
