How do I make it so that the books that are in the New Release category in mijoshop are the ones that show up in the Highlighted Books section and also under my new release section in position ja-tabs-2?

Do you mean the module named ‘Today Highlight’ as in demo site? http://ja-bookshop.demo.joomlart.com/index.php/en/

It’s Mijoshop module with type of ‘Specials’ which will show products that have value for special tab.
