Hello,
I’m a beginner and just starting to get my new site off the ground.
First phase development has been cruising along quite smoothly but I have one quick question;
How do I tweak the top menus so that the articles appear exactly as they do on the home-page? (i.e. with extended classes, etc.). At the moment they’re all the same.
I also want them in pop-up format like those on the home-page and those of the side menu categories.
I told you I’m a beginner!

If you want to have other menu items page with the same look like homepage, you can create new menu item with type of Category Blog and configure as this screenshot: http://prntscr.com/2n8uwn
Remember to clean all caches then.

Thanks for your answer.
I’ve done what you said.
Now all my top menus are empty (see portugaltravelguide.com).
How do I direct relevant articles to each respective section at the top (i.e. Portugal Travel News; Portugal on Your Palate; Pot-Pourri, etc.)?

Suppose that each of theses sections: Portugal Travel News, Portugal on Your Palate, etc… is a category, then when creating a new menu item like my reply above. In Required settings, you can select one relevant category so that each menu item will display its own articles.

I have a couple more issues hampering my progress, if you have suggestions.
When I try posting an article to my Facebook page some text appears describing Joomla’s templates. How can I fix this?
Plus, the logo I’ve uploaded temporarily doesn’t appear on mobile devices like iPads and Smartphones. Any reason why?
Lastly, I managed to synchronise the site with my Facebook page (despite the Joomla messages appearing) but Twitter proved more difficult and I haven’t yet managed to work it out. Any ideas?

When posting article into Facebook page, it will show images and description of your site, so please try to check the meta description of menu item that article belongs to. For example, if you share an article in the homepage, go to Backend > Menus > Top menu > Home menu item > Meta description: http://prntscr.com/2pmv7a then modify with your own information.
With logo issue, you can post URL of your site, I will check it for you.
Twitter has changed their API, you must input Twitter OAuth information of your Twitter account following this userguide: http://www.joomlart.com/documentation/joomla-plugins/ja-social-feed#twitter-settings
