In template manager, it seems like the language file isn’t working… See attached screenshots.

It also does this on the frontpage… TPL_SUBTITLE_PORTFOLIO. See attached screenshots.

All subtitles language default on JA Onepage Template are defined with format

<blockquote>T3_TPL_MODULENAME</blockquote>

Because you dropped demo module and created module thats the reason subtitles language are not defined on language file

You can define it here

templates/ja_onepage/languages/en-GB.tpl_ja_onepage.ini or language/en-GB/en-GB.tpl_ja_onepage.ini
and add it

T3_TPL_DESC_1="DESC 1"
T3_TPL_DESC_2 ="DESC 2"
T3_TPL_DESC_3 ="DESC 3"
