I am about to begin work on a new project for a day care center and I am wondering if Uber’s menu and page style including colors can be easily customized to look like this.

Colors are pretty simple – using CSS

As for the overall layout customizations, that might take a bit more doing …. and is a bit beyond the scope of general technical support. Nevertheless, perhaps you can provide some screenshot mockups of YOUR site – pointing out the areas you would like to try to modify … and how.

Are there any plans for a day care / Nursery template in the future? or perhaps new uber site/blocks for a day care center website?

Not sure about those theme specific template projects … but you might also take a look at the Purity III template – that had quite a number of different themes available within the quickstart package that you can customize to fit your needs.
