    Joomla 3.7 is released yesterday and we started working on the template updates for Joomla 3.7 compatibility.
    I suggest you restore the site backup and wait for the template update.
    Meanwhile, you can give me your test site access where you tried Joomla update to check, so we can test this issue during update process of the template.

    for the PHP notification, you have to contact your hosting Provider to change the PHP version.

    …and what is a wise thing to do? first, restore/backup my website and update PHP afterwards or first update PHP and then backup/restore website?

    Check all extensions are template ready for the Joomla update.If do not update Joomla and PHP version to disable if unsupported extensions.
    Take a backup off the site and update all extensions, templates, Joomla and then PHP version.

    This is going to be a great "Fun" time. What is to be or not to be? To upgrade the template first – or Joomla 3.7??

    Before updating Joomla all extensions and template must ready for it, so when u update Joomla the extension and template working fine.
    Kindly wait for the template update before updating Joomla.
