When I choose the Blue color, it gives me yellow.

It due to style of 'Pink' theme - your own custom theme in template, by default, this template doesn't have pink theme.
You can check this file:

The 'cat-blue' class is declared with kind of yellow color: https://prnt.sc/tlqd1s
So this blue is the default color of the template, and by changing it to yellow, it changed everywhere.
If I change it manually, will it work?
Yes, if you define a color for that class and of course if any place uses this class, it will inherit that color.
If you want to use a new color, you should customize a new class + new color for category.
The point is that I do not want other points to be affected!
Then you can consider to add new color field as I mentioned.
What is the Field Groups category?
technova76 Like an article must belong to a category, Joomla supports custom field and each field can be assigned to a field group.
This is basic knowledge of Joomla, you can make a quick search for more info.
